Master chefs sing praises of local contestants

Master chefs Andre Niederhauser and Augusto Schreiner Kneissl have lauded the performance of local chefs.

The professionals were invited to judge Sunday's Angostura aromatic bitters food competition, which was organised by the Trinidad Hotels Restaurants and Tourism Association (THRTA), in Chaguaramas.

Eight chefs and four pastry chefs competed for positions in the National Culinary Team, which will content the 2008 Taste of the Caribbean later this year. Taste of the Caribbean, which is the annual celebration of contemporary Caribbean cuisine and culture, provides a showcase for diversity culinary skills and styles found throughout the Caribbean.

Hotelier and chef Andre Niederhauser, of Cunda de Vida, in Panama said: "There were a lot of first timers in the competition who had a very good approach which shows that peer training is actually happening.

Students Compete in Culinary Competition

It's a culinary competition between high school students. Teams have to prepare a three-course meal in 60 minutes. Provo High School Team 1 won this year's event. They'll go to San Diego on April 23 to compete in the National Prostart Invitational. Fox 13 Photojournalist Brian Zeuthen has a look through the lens. .


Top shell: Vermont author's oyster book honored

On Monday, the James Beard Foundation released the finalist list for its prestigious 2008 book awards, and "A Geography of Oysters" (Bloomsbury, $24.95) by East Calais-based author and food writer Rowan Jacobsen earned a nomination in the reference category. Exactly a week ago, the book received a similar nomination for the respected awards given by the International Association of Culinary Professionals.

These were by no means the first nod of excellence received by Jacobsen, who is also a staff writer for Edward Behr's Art of Eating, previously authored "Chocolate Unwrapped" (Invisible Cities, 2003), and has written for The New York Times, Saveur and NPR.org.
